Marshmallow firm joins forces with Ulster University
The calorie count and shelf-life of marshmallows from Co Londonderry have been analysed in a major research project.
The Gourmet Mallow Company in Limavady secured an Innovation Voucher from Invest NI to fund their work with Ulster University.
The university's food and consumer testing suite carried out analysis for the husband-and-wife firm. Its products come in 20 flavours including banoffee pie, rhubarb and custard, mint choc chip, cookies and cream, salted caramel and Turkish delight.
Owner Yolande Shannon said: "Along with the research on extending the shelf life of the mallows, we now have valuable nutritional information that is a requirement for selling in larger quantities. This is a huge benefit to us in terms of attracting new outlets for our products and opening up opportunities for export."
The company's lemon meringue mallow won gold in the confectionery section of the 2016 Blas na hEireann Irish Food Awards.
Mrs Shannon said the firm hoped to continue working with Ulster University to develop its range of sugar-free and vegan mallows. Invest NI said it would be seeking applications for Innovation Vouchers between April 24 and May 12.
