Baked potato skins with smoked chilli butter
A household name in Northern Ireland, top chef Paula McIntyre has rustled up some delicious and simple Golden Cow recipes that are guaranteed to melt your heart.
What you'll need
4 large baked potatoes
75g Golden Cow butter
1 tsp smoked paprika
Chopped flat leaf parsley
Pre-heat oven to 200°C/gas 6/400°F.
Wrap the potatoes in foil and bake until soft — about one hour.
Remove from foil and cut in quarters lengthwise.
Scoop out the flesh from the middle of the cooked potato (use this for pancakes or thickening soups).
Place on a baking tray, flesh side up and brush with the butter.
Bake for 15 minutes.
Serve scattered with some sea salt and chopped fresh parsley.
