Grilled leeks with herbed cheese gratin

A Paula McIntyre Christmas recipe for Spar

Ingredients

  • 4 medium leeks

  • 25g butter

  • 100g mature cheddar, grated

  • 50g breadcrumbs

  • 4 tablespoons olive oil

  • 1 tablespoon thyme leaves

  • Handful chopped parsley

  • Method

    Cut the green part from the leeks and slice. Wash well and cook in the butter until soft. Place in a baking dish. Cut the white of the leeks in half through the root and cook in salted water, gently until cooked. Drain and dry. Brush with oil and cook in a hot griddle pan to mark. Place on top of the green leeks. Mix the crumbs, oil, herbs and cheese and sprinkle over the top. Bake in a 180oc oven for 15 minutes
