Honey and star anise roast carrots
A Paula McIntyre Christmas recipe for Spar
6 medium carrots
2 tablespoons olive oil
3 star anise
2 tablespoons honey
Peel the carrots and split in half lengthwise.
Toss in the oil and season with salt.
Place in a baking tin with the star anise and cover with foil.
Bake in a 180oc oven for 45 minutes or until soft -check them every now and then and toss around.
When soft place in a pan with the butter and honey and cook to glaze.
