The Sunday roast is a British classic and a perfect excuse for everyone to get together to enjoy a lazy lunch. Food cultures unite as the British Sunday roast gets a sizzling twist with Santa Maria Fajita Seasoning Mix, added as a tasty seasoning to the meat before being slow-cooked and served alongside side dishes of roast potatoes, vegetables and gravy.

Mexican Roast Chicken

Serves 4

Prep time: 5  minutes

Cooking time: 120 minutes


  • 50g butter, softened
  • 1 sachet Santa Maria Fajita Seasoning Mix Medium
  • 1 large fresh whole chicken

Serve with:

  • Potatoes
  • Vegetables
  • Gravy


  • Mix together butter and half of the fajita seasoning until well blended
  • Spread the butter under the skin of the chicken, taking care not to rip the skin
  • Spread or rub the remaining fajita seasoning inside the chicken
  • Roast the chicken until cooked, covering with foil if necessary
  • Serve with roast potatoes, gravy and vegetables of your choice
