A delicious chicken pizza with juicy pineapple, plenty of vegetables and a great tasting chilli kick. This dish combines Italian and Mexican flavours and is an excellent recipe idea for using up leftover ingredients from fajitas.

Pineapple Fajita Pizza

Serves 4

Prep time: 20 minutes

Cooking time: 20 minutes


  • 1tbsp oil
  • 500g chicken breasts cut into strips
  • 1 sachet Santa Maria Fajita Seasoning Mix Medium
  • 1 red onion, finely sliced
  • 1 red pepper, cut into strips
  • Half a fresh pineapple, diced
  • 4 Santa Maria Chilli & Jalapeño Soft Tortillas
  • 150ml Santa Maria Salsa Medium
  • 250g cheese, grated


  • Pre-heat the oven to 220°C. Heat the oil in a frying pan and brown the chicken strips. Add the onion, pepper and fajita seasoning mix. Leave to sizzle for about 3-4 minutes, add the pineapple chunks
  • Divide the salsa equally between the tortillas and add half the cheese. Then add the fajita filling and top with the rest of the cheese
  • Place the pizzas on a baking tray and bake in the oven on the lowest shelf. Bake for 5-8 minutes, or until the cheese has melted and turned a lovely golden colour
  • Serve immediately with a delicious green salad
