Potato pancakes with crispy bacon and chive butter
A household name in Northern Ireland, top chef Paula McIntyre has rustled up some delicious and simple Golden Cow recipes that are guaranteed to melt your heart .
What you'll need
for the Potato pancakes
250g mashed potatoes
100g self-raising flour
Good pinch of salt
100ml whole milk
25g melted Golden Cow butter
Oil for cooking
for the Crispy bacon and chive butter
1 small white onion, chopped
2 cloves garlic, crushed
1 tbsp olive oil
4 rashers streaky bacon
2 tbsp chopped chives
100g Golden Cow butter, at room temperature
Mix the potatoes with the flour and salt. Whisk the milk, butter and egg and add to the mixture. Mix to a smooth paste and rest for 10 minutes.
Lightly brush a medium-hot frying pan or griddle with oil and drop tablespoons of the mixture into the pan.
When bubbles appear, flip over and cook for a further minute.
To prepare the crispy bacon and chive butter, first fry the onion and garlic in the oil until golden.
Grill the bacon until crispy, pat dry with kitchen paper and chop finely.
Blend the onion mixture with the Golden Cow butter and transfer to a bowl.
Beat in the bacon and chives.
Take a sheet of cling film and place on a surface, spoon the butter into the middle in a line and roll into a sausage shape.
Chill until solid, then slice and place on top of the pancakes.
