Potatoes stuffed with Fivemiletown cheddar and crispy bacon

A Paula McIntyre Christmas recipe for Spar

Ingredients

  • 4 jacket potatoes

  • 4 rashers smoky streaky bacon

  • 100g grated mature Fivemiletown cheddar

  • 2 onions, peeled and chopped

  • 25g butter

  • 1 egg yolk

  • 100ml sour cream

  • Method

    Cut the potatoes in half lengthwise and place on a baking tray. Cover with foil and bake until soft. Chop the bacon and cook until crispy. Remove from pan and add the butter and onions to the pan. Cook until golden and place in a bowl with the bacon. Scoop the flesh from the potatoes and add to the bacon onion mixture. Mix in the egg yolk and sour cream. Check seasoning and place back in the potato shells. Bake in a 200º oven for 15 minutes.
