Recipe: Apple pecan muffins
Take the pain out of back-to-school time with these healthy treats, using Golden Cow butter, from chef Paula McIntyre.
What you'll need
200g plain flour
½ tsp baking soda
75g castor sugar
75g melted and cooled Golden Cow butter
50g roughly chopped pecan nuts
1 eating apple, peeled, cored and chopped
Set oven to 180°C/gas 4/350°F and line a muffin tray with 10 muffin liners.
Sift the flour, baking soda and sugar into a bowl. Whisk the melted Golden Cow butter, buttermilk and egg together and add to the dry mixture. Fold together with the pecans and apple. Place in muffin cups and bake for 20 minutes.
