Recipe: Butter-roasted potatoes

Celeb chef and Golden Cow ambassador Paula McIntyre shows you how to butter people up with some tasty Christmas dishes

What you'll need

1kg potatoes, either Maris Piper or King Edwards

75g melted Golden Cow butter

Salt to taste

Serves 4

Carefully peel the potatoes and place in a saucepan of cold water. Bring to the boil and when boiling, cook for a further two minutes, then drain. Using a fork, lightly roughen the outside of the potatoes and place on a tray lined with kitchen paper to dry.

Heat oven to 200°C/gas 6/400°F. Brush the potatoes with the melted Golden Cow butter and place on a buttered roasting tray. Roast for 30 minutes, basting occasionally. Serve immediately.
