This hearty side of buttery mashed potatoes flavoured with chopped spring onions is one of Northern Ireland’s most popular dishes — and it’s not hard to see why
What you'll need
1kg Maris Piper potatoes, peeled and cut into chunks
50ml semi-skimmed milk
25g unsalted butter
1 bunch spring onions, finely chopped
Place the potatoes in a large pan of cold water. Bring to the boil, then simmer for 12–15 minutes, until tender.
Drain the potatoes well and return to the pan for 30 seconds to dry out, then mash with the milk and butter until smooth and fluffy.
Stir the spring onions through the mash, season with freshly ground black pepper and serve immediately.
