These Flahavan’s recipes show that there’s more to oats than just porridge.
What you'll need
50g Flahavan’s Irish Porridge Oats
50g spinach, chopped
75g Boursin cheese
A few basil leaves, torn
4 chicken breasts
1tbsp olive oil
Preheat oven to 180°C/gas 4/350°F. In a bowl mix together the oats, spinach, Boursin and basil. Season with plenty of salt and pepper. Cut through the length of each chicken breast, so that one edge remains intact. Open each one out and flatten a little with a rolling pin. Spread the spinach mixture onto half of each flattened chicken breast, fold over the other half of the chicken and secure with a cocktail stick.
Heat oil in a large frying pan. Add chicken and fry for five minutes, turning half way through, so that chicken is golden on both sides. Transfer to a roasting tray and roast in the oven for 10 minutes until chicken is completely cooked.
Serve with roasted cherry tomatoes.
