Recipe: Chocolate and crispy bacon souffle omelette

What you'll need

4 large eggs

1 tbsp caster sugar

1 tbsp drinking chocolate powder

5 rashers streaky bacon

Serves 2

Grill the bacon until crispy, drain on kitchen paper and chop when cool.

Divide the eggs into two bowls — one for the yolks and one for the whites. Add chocolate powder and caster sugar to the yolks and whisk together. Whisk the egg whites to a soft peak, with a metal spoon gently fold the chocolate mixture into the egg whites. Heat a little oil in a non stick frying pan and pour in the mixture. Cook for about three minutes, then sprinkle on the bacon, and put the pan under the grill to cook the top.
