What you'll need

400ml Guinness

150g dark chocolate (Bournville or similar)

230g butter

340g soft brown sugar

4 eggs

230g plain flour

100g cocoa powder

2 tsp bicarbonate of soda

FOR THE CHOCOLATE SAUCE

100g butter

100g cocoa powder

100g drinking chocolate

200g golden syrup

125ml whipping cream

Serves 6

Pre-heat the oven to 180°C/350°F/gas 4. Butter and line a 23cm springform tin, or make individual cakes using a muffin tin. Pour the Guinness into a saucepan and heat, then add the chocolate and melt. Beat the sugar and butter until light and fluffy and gradually add the eggs, flour, soda and cocoa. Now mix in the Guinness and melted chocolate, making sure you incorporate all the flour.

Pour the mixture into a prepared tin and bake for 35 minutes (the muffin tin may take less time). Test with a knife; it’s cooked when it comes out clean. Turn out onto a wire rack to cool. Serve warm with ice cream or fresh cream and chocolate sauce.

To make the sauce, melt the butter in a saucepan and add the cocoa, drinking chocolate and golden syrup. Bring to the boil/simmer making sure all the powder is well mixed in and then add the whipping cream.

Bring back to the boil and it’s ready.
