Recipe: Goat's cheese with roasted pepper sandwhich
As a new survey reveals that many mums skip lunch because they’re so busy, Kingsmill share some delicious and quick sandwich ideas to keep you going throughout the day.
What you'll need
4 slices Kingsmill Tasty Wholemeal bread
15g frisee or baby green leaf lettuce
120g goat’s cheese
100g grilled or roasted marinated red and yellow pepper pieces
3 small vine tomatoes, sliced
½ tbsp low-fat mayonnaise |or tomato relish
Makes TWO sandwiches
Place the lettuce on two slices of bread. Divide the goat's cheese between the two sandwiches, top with the peppers and tomatoes.
Spread the mayonnaise or tomato relish on the remaining two slices and place (mayonnaise side down) onto the sandwich.
Cut in half and serve.
