Recipe: Grilled steak sandwich on toasted soda

What you'll need
1 Sunblest Soda Farl
250g trimmed rump steak
½ tsp peppercorns
1 clove garlic, minced
1 tsp balsamic vinegar
3 tsp local rapeseed oil
4 scallions, cut in half lengthwise
1 tomato sliced
for the Horseradish Dressing
1 tbsp horseradish dressing
50ml sour cream
1 dssp mayonnaise
Juice of half a lemon
1 tbsp finely chopped chives
Mix peppercorns, garlic, vinegar and two teaspoons of the oil in a dish and add the steak. Rub around to coat then marinate in the fridge for one hour or overnight.
Before cooking, leave the steak at room temperature for 20 minutes, grill the steak to your liking, rest for five minutes and slice. Brush the scallions with the remaining teaspoon of oil and wilt on a griddle pan.
For horseradish dressing, whisk together ingredients and season to taste.
Toast the bread and cut in two. Spread each half with dressing. Top with rocket leaves and sliced tomato. Add the steak and scallions and drizzle over remaining dressing.
