Recipe: Lemon and worcestershire sauce marinated pork chops and bbq sauce

What you'll need

4 boneless pork chops

3tbsp lemon juice

3 tbsp sweet sherry

3 tbsp soy sauce

3 tbsp vegetable oil

Salt and pepper

for the BBQ Sauce

1 red onion, peeled and chopped finely

1 crushed clove of garlic

2 tbsp wine vinegar

200ml chicken stock

1 tbsp English mustard

2 tbsp soft brown sugar

2 slices of lemon

2 bay leaves

Pinch of cayenne pepper

2 tbsp Worcester Sauce

6 tbsp tomato ketchup

2 tbsp tomato puree

Vegetable oil for frying

Salt and pepper

Serves 4

Marinade chops overnight (or for minimum of two hours) in mixture of lemon juice, sweet sherry, soy sauce and vegetable oil, salt and pepper.

To make the BBQ sauce, put a little oil in a saucepan and fry off the onion and garlic until soft. Next add the cayenne, soft brown sugar, mustard and tomato purée. Cook for two to three minutes and then add the vinegar, lemon slices, bay leaves and stock. Simmer for 20 minutes and then add Worcester sauce and tomato ketchup.

Season with salt and pepper and simmer for a further 10 minutes. Remove lemon slices and bay leaf and it is ready to serve over chops fresh from the BBQ.

Salad suggestions Grated carrot salad with lemon juice, brown sugar, soy sauce and toasted sunflower seeds.

Slaw made with white cabbage, carrot, apple, red pepper and sweetcorn and a simple vinaigrette.
