Recipe: Oatmeal chocolate chip cookies

Take the pain out of back-to-school time with these healthy treats, using Golden Cow butter, from chef Paula McIntyre.

What you'll need

90g Golden Cow butter

75g soft brown sugar

1 egg

75g plain flour

1 tsp baking soda

100g porridge oats

50g chocolate chips

Set oven to 180°C/gas 4/350°F. Line two baking trays with parchment paper. Beat Golden Cow butter and sugar until light and fluffy. Add egg and mix well. Fold in the oats, flour and chocolate chips.

Take walnut-sized pieces of the dough and roll into balls.

Place on paper two inches apart, as they will spread. Bake for about 12-15 minutes or until golden brown.

Cool slightly on the tray and then transfer to a cooling rack. Eat at once or store in an airtight container.
