Recipe: Onion bhaji and raita wrap
As a new survey reveals that many mums skip lunch because they’re so busy, Kingsmill share some delicious and quick sandwich ideas to keep you going throughout the day.
What you'll need
2 Kingsmill 50/50 Wraps
4 small onion bhajis (approx 200g)
For the raita
8 fresh mint leaves, chopped
½ cucumber, peeled|deseeded and diced
4 tbsp natural yoghurt
½ tsp ground cumin
Black pepper to season
2 tbsp mango chutney
3 Cos lettuce leaves, shredded
Makes 1 sandwich
Warm the onion bhajis in a pre-heated oven set at 200°C /400°F/gas 6 for 10-12 minutes.
Mix the raita ingredients in a bowl until you’re sure they’re well combined.
Spread the mango chutney onto the Kingsmill 50/50 Wraps, add the lettuce leaves, place the bhajis on top (cut them in half to spread evenly if preferred).
Then spoon over the raita, roll and enjoy.
Serve hot or cold.
