What you'll need
1 ripe pineapple, thickly sliced, peeled and cored
Peppercorns, coarsely ground
Juice and grated rind of an orange
2 tsp caster sugar
Orange liqueur or rum (optional)
Press peppercorns into both sides of pineapple, sprinkle with sugar, barbecue sugar side down for six to seven minutes. Put extra sugar, orange peel and juice, two tbsps water or liqueur/rum and heat until golden. Pour over pineapple. Serve hot with ice cream.
