Recipe: Sausage pattie on toasted potato bread

What you'll need
1 slice of Sunblest potato bread
200g good quality butcher sausage
1 dssp brown sauce
3 turns cracked black pepper
½ tsp local rapeseed oil
for the Caramelised Onions
2 medium white onions, peeled and finely sliced
1 tbsp local rapeseed oil
1 tbsp balsamic vinegar
1 tbsp brown sugar
Ground black pepper to taste
Remove the skins from the sausage and place the meat in a bowl.
Mix the sauce and pepper in thoroughly. Split in two, dampen your hands and form the mixture into two square patties the same size as the potato bread.
Brush with the oil and cook under a medium grill until cooked through, turning occasionally.
For the caramelised onions, heat the oil in a saucepan over medium heat and add the onions. Place a lid on and cook gently for about five minutes, stirring occasionally until they are soft and golden.
Add the balsamic and sugar and cook until the liquid has evaporated and season to taste.
To serve, grill the potato bread on both sides and add one piece with a patty and then spoon on the caramelised onion.
