Recipe: Spring vegetable stir fry
Spring menu that's sure to be a hit at your family gatherings.
What you'll need
Light and fresh, this is a fast stir fry of young carrots, baby leeks, baby courgettes and mange tout tossed together in extra virgin olive oil and finished with snipped chives and flaked almonds
3 tbsp extra virgin olive oil
Bunch of baby carrots with green tops on
12 baby courgettes, trimmed
12 baby leeks, trimmed
12 mangetouts, trimmed
Snipped chives and flaked almonds, both for sprinkling
Heat the extra virgin olive oil in a wok or large frying pan.
Add carrots and courgettes and toss around for around four minutes, then add the leeks and mangetouts and continue cooking for a few minutes.
Sprinkle with snipped chives and flaked almonds before serving.
