What you'll need
200g feta cheese (reduced fat)
2 spring onions, finely sliced
2 tbsp chopped mint
2 tbsp chopped parsley
100g black olives
1 tbsp pomegranate molasses
Peel, deseed and dice the half watermelon and carefully arrange on your serving plates.
Crumble 200g reduced-fat feta over the watermelon, then scatter two finely sliced spring onions, two tablespoons each of chopped mint and parsley and 100g black olives.
Sprinkle the 100g pomegranate seeds over the salad and then serve drizzled with one tablespoon of pomegranate molasses.
