Personal Stories: Striking gold helped teen's confidence
Award-winning chef Ryan Moore on his love for cooking
Ryan (17) from the Antrim Road area of north Belfast is celebrating after being announced overall winner and winning gold in the Culinary Ability Awards at the CATEX catering competition in Dublin.
The talented teenager is a trainee with Barnardo's Dr B's Kitchen in Belfast city centre which has been running for 25 years.
It trains young people with learning difficulties for a career in the hospitality industry.
Ryan said: "I came to Dr B's on an initial trial from school and I loved it.
"I never thought that cooking could be a job but now I know this is what I want to do.
"There are so many opportunities and I want to use it to travel and see as much of the world as possible."
Ryan won the CATEX competition for his oriental duck breast served with Asian-style noodles and cardamom and orange duck bonbons set on a sweet chilli glaze.
The success in Dublin has been a huge boost to the teenager's confidence.
Ryan said: "It was amazing to win and then to be announced the overall winner, I couldn't believe it. I don't think it's sunk in yet.
"If I hadn't had Andrew the chef mentor from Dr B's there I would have cracked. He gave me the confidence to focus and finish it off.
"Dr B's is great, the staff are brilliant, they really look out for you and there is so much humour every day, I really love it."
