What you'll need
250g of chump steak per person
FOR THE Marinade/sauce
100g parsley
4 garlic cloves crushed
2 tbsp fresh oregano or marjoram (2 tsp if dried)
100ml olive oil
2 tbsp red wine vinegar
1 tsp salt
Ground black pepper
½ tsp red chilli flakes
1small red onion, finely chopped
Juice of ½ lemon
Serves 4
Chop parsley, oregano and garlic in a food processor or by hand, then put mixture into a bowl and add the other marinade ingredients, mixing well. Use half the mixture to marinade the steaks for as long as possible and save the other half as a sauce for use when the steaks are cooked. Grill the steaks to your liking and spoon over some of the sauce.
