What you'll need
180g Philadelphia Light
100ml low-fat crème fraiche
20g icing sugar
2 small ripe peaches, skinned and stoned
100g fresh raspberries
6 meringue nests
75ml ready-made raspberry coulis or sauce
serves 6
Mix together the Philly, crème fraiche and sugar. Purée or finely chop the peaches and lightly crush the raspberries with a fork. Stir both fruits into the Philly mixture.
Spoon into the meringue nests. If it’s to your taste, serve the pavlovas drizzled with raspberry coulis.
