What you'll need
4 Sunblest pancakes
2 Granny Smith apples
Juice of half a lemon
25g butter
50g caster sugar
1 tbsp maple syrup
½ tsp cinnamon
¼ tsp mixed spice
1 tsp vanilla paste or extract
SERVES 2
Peel and core the apples, cut into quarters, cut each quarter into six pieces and toss in the lemon juice.
Heat the butter in a frying pan over medium heat, increase the heat and add the apples and sugar.
Cook until soft, tossing frequently. Add the maple syrup, spices and vanilla and cook for one minute.
To serve, spoon a quarter of the compote on to the pancake, top with another pancake and then top it off with a quarter of the compote. Repeat with the remaining pancakes.
