I had been on holiday for a week and was taken ill while I was abroad.
I sent my employer a sick note to cover the second week of the time I was away and then went back to work on the third week.

My manager wants to see my flight tickets as she has listened to some gossip at work saying that as I was there for two weeks, I was on holiday.

Your employer is on sticky ground here as everyone saw you were ill when you returned to work too early. What she thinks she will achieve by seeing your tickets isn't really clear.
However, I am not sure what you are hoping to gain by withholding them, either.
If you had booked return flights, unless you were so ill you had to be flown home, you wouldn't have come back until the date of your flight anyway.
So, what will the flight tickets prove either way?
Assuming you have a contract of employment, you will have a right to both sick pay and holiday pay.
If you are taken ill while you are on holiday, then you are entitled to take the time as “sick” and have the days added to your holiday entitlement.
However, it is a complicated area of employment law and there have been a number of disputes and cases about it.
I suggest you contact the local Citizens Advice Bureau, which has a lot of expertise in this area and should be able to help you.
