All the best: Eoin O'Sullivan on his favourite things

The 52-year-old is general manager of the Culloden Estate and Spa. He is married to Michele and they have two children, Liam (20) and Megan (18).

My best moment

I think the birth of both of my kids - that's certainly a momentous one for most people.

My best song

Brown Eyed Girl by Van Morrison - because it reminds me of my wife's brown eyes. We had that song played at our wedding. I'm a huge Van Morrison fan and if I'm lucky I might catch him playing at the hotel sometime.

My best way to relax

A Sunday boat trip in the Turks and Caicos Islands. I lived there for nine years and was in the Caribbean for nearly 15. We would go out on friends' boats and sit in the clear blue water with an ice-cold beer. Now that we're back here, I really enjoy a game of golf. I don't play it competitively but it does help to clear the mind.

My best job

My first general manager's position which was in Jamaica at a Sandals resort. I met someone involved in the hotel group who suggested I come and work for them in the mid-Nineties. It was hard work - as you can imagine - but a fantastic experience.

My best bit of advice

My father said to 'treat people as you would like to be treated yourself'.

My best movie

Gladiator directed by Ridley Scott and starring Russell Crowe (below). I really enjoyed the whole historical, Roman influence on the film. It also has a great story that keeps you hooked.

My best gift

A watercolour painting of ships in Dublin Bay which was 40th birthday present from friends. It was a complete surprise and I still love it.

My best achievement

I'm a four-time World Irish Dancing Champion. It was a long time ago, certainly in the pre-Riverdance days, so I missed out on all that. There was a lot of hard work and preparation involved, as well as travel and training. My legs don't move anywhere near as fast now. Recently, it's winning the Irish Hotel Luxury Hotel of the Year in March and being highly commended in the Georgina Campbell Irish Breakfast Awards last month.

My best buy

A Labrador pup called Carrigduff Cara 14 years ago. She died last year, but she was the nicest and greatest addition to our family and she is sorely missed. We might get another.

My best book

Hotel by Arthur Hailey which has had a huge influence on my life. It's one of the reasons I went to hotel college and into the business. The book really piqued my interest in all of the things that happen at a hotel.
