The University of Ulster student from Holywood, Co Down works at Dublin's popular Michelin star restaurant Chapter One.
The 22-year-old has just been named Eurotoques Young Chef of the Year for 2014, which comes with a €1,000 prize and a two-week placement with The Square restaurant in Mayfair, London.
Matt said: "I started in Rayanne House in Holywood washing dishes when I was 14. I gradually progressed from there to learning starters. The owner really brought me on and my love of food developed from there.
"I'm studying Culinary Arts with the University of Ulster.
"I came down to Dublin for lunch one day and thought Chapter One was just amazing.
"When it came to placement I knew where I wanted.
"They agreed to a trial and after that they say 'yes' they would take me for the year."
Matt entered the Eurotoques Young Chef of the Year competition for experience so was thrilled to win.
"It involved a lot of hard work. I had to write an essay on the theme 'No chef is an island' and I had interviews with top chefs in Ireland.
"The next stage was the final which involved two of us from Chapter One. I made a main course of turbot and brown shrimp and a dessert with Tipperary apples.
"It's amazing to win. I entered for the experience, to learn and see how far I could get so I am very pleased."
