Easy summer entertaining is high on our agenda at the moment. Making the most of the good weather while we have it with friends and family after all those months in lockdown makes this summer all the more sweet.

My summer kitchen is more about assembly than full recipes that require a lot of attention. Dishes big on flavour that can be brought together with minimal effort in parts, and assembled when you choose to eat, are always a winner this time of year.
