Top chef Paula McIntyre has rustled up some delicious Golden Cow recipes ideal for alfresco dining over the holiday period
What you'll need
250g Golden Cow butter
Zest of 2 lemons
4 cloves garlic, peeled and finely sliced
4 stalks rosemary
Chop the butter and melt gently.
Cool for 10 minutes.
Gently scoop the golden butter with a ladle from the milky part.
Place the golden clarified butter in a saucepan and add the garlic and lemon zest.
Warm gently for 5 minutes.
Remove the rosemary leaves from the stalks and add to the pan.
Turn off the heat and allow the flavours to infuse.
Use to brush meat, vegetables or fish on the barbecue. Use a stalk of rosemary as a brush to impart more flavour.
