As the final Harry Potter movie arrives in our cinemas, Ryan’s bar in Belfast is once again being transformed into the Leaky Cauldron — and here’s some of their terrific recipes that are sure to cast a spell over food fans
What you'll need
4 boneless, skinless chicken breast fillets
3 tablespoons Cajun seasoning
4 red onion focaccia rolls, halved
Preheat cast-iron skillet over a high heat.
Marinate chicken in Cajun seasoning and oil for 30 mins. Place a small amount of oil in skillet and place seasoned chicken breasts in skillet.
Cook until chicken is sealed, then turn and cook for three minutes on either side and finish in the oven for 10 mins at 170°C/gas 3/325°F. Serve on toasted focaccia with a light Cajun mayonnaise, salad and chunky wedges.
