What you'll need

4 pork chops, de-boned and fat cut off

FOR THE SALSA

3 tbsp white wine vinegar

2 tsp olive oil optional

3 tbsp fresh coriander, chopped

190g sweetcorn

1 red onion, chopped finely

1 small green chilli, de-seeded and finely chopped

FOR THE CABBAGE SALAD

½ red cabbage, finely shredded

2 carrots, finely grated

Juice of ½ lemon

2 tsp olive oil optional

SERVES 4

Combine all the salsa ingredients in a bowl and set aside. To make the cabbage and carrot salad, combine the cabbage, carrot, lemon juice and olive oil and set aside.

Trim the fat from the pork chops and griddle or grill the pork on a medium heat for 8 to 10 minutes until the juices run clear. Serve with the salsa and salad on the side.
