A household name in Northern Ireland, top chef Paula McIntyre has rustled up some delicious and simple Golden Cow recipes that are guaranteed to melt your heart.
What you'll need
1kg peeled and thinly sliced potatoes
200g melted Golden Cow butter
Pre-heat oven to 200°C/gas 6/400°F. Wash the slices of potatoes and then dry well with a clean tea towel to remove the starch.
Brush an ovenproof dish with some butter and then place a layer of the potatoes on top. Brush with butter and then add another layer of potato, repeating the process until the potatoes are finished. Brush the top liberally with butter and cover with parchment paper.
Bake until the potatoes are soft when a knife is inserted. Remove paper and cook for a further five minutes until the top is crisp and golden.
Alternatively, brush the bottom of a pan that can fit in your oven and has a metal handle. Arrange the slices of potatoes in the bottom, brush with butter and repeat as with the method above.
Cover with paper and place in the hot oven in the same way.
When the potatoes are cooked, place the pan on top of the stove and cook for a couple of minutes. Place a serving plate on top and carefully flip the pan over to serve.
