How to make the perfect sage and chestnut stuffing
Herby stuffing is the ultimate fragrant accompaniment for Christmas turkey, whether inside or on the side.
We've teamed up with Belfast Cookery School to show you how to make this delicious sage and chestnut stuffing.
- 1 onion
- 50g of breadcrumbs
- 100g of chestnuts
- 500g sausage meat
- Bunch of sage
- 2 rashers of smoked bacon
- ½ tsp nutmeg
- ½ lemon
- ½ orange
- 1 large free range egg
1. Peel, quarter and blitz the onion in a food processor until finely chopped then tip into a bowl.
2. To the onions add breadcrumbs then crush and crumble in the chestnuts.
3. Add sausage meat, chopped sage, chopped bacon, zest of orange and lemon, crack in the egg and a good pinch of salt and pepper. Now get your hands in and give a good mix until well combined. Stuff turkey as chef demos. If there is stuffing left, it can be rolled into a ball or cooked in oven dish.
