Recipe: Chocolate tart with strawberry cream

To celebrate winning the Northern Ireland heat of TV’s Great British Menu, Deanes at Queens chef Chris Fearon shares some special recipes

What you'll need

180g liquid glucose

180g sugar

180g water

600g chocolate (dark 70% cocoa)

750ml cream

125g butter (melted)

375g digestive biscuits

for the Strawberry Cream

100ml single cream

50g frozen strawberries

25g sugar icing

50g fresh strawberries

½ vanilla pod

Serves 4-6

To start, crush the digestive biscuits and mix with your melted butter, pressing this into a cake or tart case. This is your base. Refrigerate for 20 minutes to set. Heat glucose, sugar and water together to dissolve the sugar and glucose.

Pour your sugar syrup mixture over the chocolate and whisk until fully melted and incorporated.

Slowly add your chocolate mix to your lightly whipped cream, and fold until you have a nice light consistency.

Pour this over the base and leave to set for several hours.

Dust frozen strawberries with icing sugar and blitz in a food processor to make a purée. Lightly whisk the cream and add the vanilla pod

Fold in the purée and finish by adding sliced strawberries.
