Recipe: Grilled halloumi & sunblush tomato pocket

What you'll need
2 Kingsmill 50/50 Pockets
150g low-fat Halloumi cheese, sliced
1 tsp low fat mayonnaise
6 pieces sunblush tomatoes
4 fresh basil leaves, torn
Makes TWO sandwiches
Place the sliced halloumi on a pre-heated griddle pan and cook for around two minutes per side.
Place the Kingsmill 50/50 Pocket into a toaster to warm through, open the pockets then spread on the mayonnaise, place the lettuce into the bottom of the pocket then add the halloumi, sunblush tomatoes and, lastly, add the basil.
