Recipe: Home-made Christmas pudding with whipped Irish cream butter
Celeb chef and Golden Cow ambassador Paula McIntyre shows you how to butter people up with some tasty Christmas dishes
What you'll need
225g Golden Cow butter (fridge cold)
100g self-raising flour
2 tsp mixed spice
1 tsp ground cinnamon
450g dark brown sugar
1kg mixed dried fruit (Paula’s tip – why not supplement dried figs, apricots, cranberries or pears for some of the mixture?)
50g chopped pecan nuts
1 medium cooking apple
Dash brandy or rum
Zest and juice of 1 orange
Zest and juice of 1 lemon
for the WHIPPED IRISH CREAM BUTTER
225g soft Golden Cow butter
2 tablespoons icing sugar
75ml Irish Cream liqueur (or whiskey or brandy)
Grate the Golden Cow butter into a big bowl and mix in the flour, spice and cinnamon. Fold in the sugar (break it up if it’s compacted), pecan nuts, breadcrumbs and dried fruit.
In a separate bowl, whisk the stout, eggs, citrus zests and juice and brandy together and fold in the grated apple.
Mix this into the butter mixture really well — get the whole family involved and make a wish as you stir!
Grease two pudding bowls with Golden Cow butter and place half the mixture in each. Place a round of parchment paper on top and then loosely cover with foil. Tie with string in place.
Steam for 6 hours. Cool and remove from mould.
Serve with the whipped Irish Cream butter. To make this, place the Golden Cow butter into a mixing bowl and sift in the sugar.
Whisk for at least 10 minutes until nearly white.
Fold in the liqueur and serve.
