Recipe: Mini soda bread pizzas
Take the pain out of back-to-school time with these healthy treats, using Golden Cow butter, from chef Paula McIntyre.
What you'll need
200g soda bread flour
50g melted Golden Cow butter
1 tsp baking soda
for the Tomato Sauce
½ small white onion, chopped
2 cloves garlic, chopped
2 chopped ripe tomatoes
1 small tin chopped tomatoes
1 tbsp olive oil
Sift the flour, soda and salt into a bowl and make a well in the centre.
Mix in the buttermilk and Golden Cow butter to dough.
Place on a floured board and divide into six pieces.
Place on two lightly floured tins and set oven to 200°C/gas 6/400°F.
To make the tomato sauce, cook the onion and garlic in the oil in a pan, over a medium heat, until soft and golden.
Add the tomatoes and simmer for 10 minutes.
Season with salt and pepper. Spoon over the pizzas, top with grated cheddar or mozzarella and bake for 15 minutes in the oven.
