Recipe: Toasted potato bread, and smoked salmon

Toast the success of Sunblest with these brilliant bread-winner recipes from celeb chef Paula McIntyre.

What you'll need

2 Sunblest potato breads

100g spinach

1 tsp local rapeseed oil

50g smoked salmon

2 eggs

1 tsp white wine vinegar

for the Mustard Dressing

½ tsp Dijon mustard

1 tsp white wine vinegar

3 tsp rapeseed oil


Half fill a saucepan with water and bring to the boil. Add the vinegar. Gently add the eggs and lower the heat. Poach for three minutes, remove and drain on kitchen paper.

Toast the potato breads.

Heat the oil in a saucepan, add the spinach and wilt, season with salt and pepper.

For the mustard dressing, whisk together, season and spoon over the egg.

Garnish with chopped chives.

To serve, top the potato bread with the spinach, then the smoked salmon and the egg. Spoon the dressing over the poached egg and garnish with chopped chives.
