Wimbledon Eton Mess

To celebrate Wimbledon, home-cooking ace Kirstie Allsopp serves up some sensational treats that are quick and simple to prepare

Try this classic English dessert — light sweet cream, crumbled crunchy meringues and strawberries, swirled together with raspberry coulis – tastes as good as it looks!

What you'll need

300g punnet strawberries

4 meringues

300ml carton whipping cream

Half a 397g can Carnation Condensed Milk

Juice of 1 lemon

4tbsp raspberry or strawberry coulis

Serves 8

Chop the strawberries. Roughly break the meringues into bite-size pieces.

Whip the cream, add the condensed milk and re-whip to soft peaks. Add the lemon juice, which should thicken the mixture.

Reserve half the strawberries, meringue pieces and coulis to layer into the glasses, swirl the remaining ingredients into the creamy mixture.

Layer the creamy mixture with the remaining fruit, meringue and sauce into 8 serving glasses and serve!

Tip Use up the remaining half a can of Carnation Condensed Milk in a quick smoothie lollie perfect for summer picnics! Simply blend with 275g (10oz) fresh or frozen fruit and 100ml (3fl oz) fruit juice — try berries with apple juice or mangoes with pineapple juice!
