Summer cooking requires a different mindset. For me, it’s less about formulaic recipes and more about free-form cooking with the best of what’s in season. Less one-pot suppers and roast dinners, and more little plates of good things to savour in the garden with a glass of wine.

Any gatherings I’ve been cooking for lately have been just like that — plates of tomatoes, freshly sliced, tossed in spiced oil; wedges of baby gem with something sharp and salty; good crusty bread to mop it all up; and whatever might be good to cook over hot coals, only to be tossed in a sharp, herby dressing while it rests.
