It was dry-ageing which first got the carnivore’s stomach rumbling and appetites enlivened and reinvigorated a couple of decades ago.

But something which — while already a delicacy for others in Europe — is now piquing palates, mine included, is sourcing steaks which come from retired dairy cows.
