In a life cut cruelly short, she, and her husband Michael, identified a business opportunity and built it up into a thriving enterprise. Her target market was those who saw the value of health foods and snacks, and the company's success was astonishing.
Exporting to 30 countries and with sales of £14m and a workforce of 70, her company ticked all the boxes in the kind of business that the province needs - innovative, global and successful. While her death is a huge loss to the company, its real impact is on her husband and two teenage children who are in our thoughts today.
